James Beard Award-winning chef, author, and culinary historian Michael Twitty shares the historical significance of enslaved people's cooking and how black women used cooking to survive their oppression. Twitty visited Historic Fort Snelling in July 2018 and conducted historic cooking demonstrations for the public in the commandant’s house kitchen, where many enslaved people worked prior to the Civil War. Twitty is the author of “The Cooking Gene,” which won the 2018 James Beard Foundation’s Book of the Year Award.
